With a spot-on location in the Uphill part of the city, the modern Lincoln Hotel has ringside views of the splendid medieval cathedral. For a sense of occasion, the fine-dining Green Room is a romantic and stylish contemporary venue, done out with muted green walls, and plush purple and green seats at darkwood tables with white linen runners. This is where the kitchen steps up to the plate with a tersely-worded menu promising a bang up-to-date repertoire of creative dishes built on prime Lincolnshire ingredients. Intricate flavour combinations and unusual marriages define the cooking - perhaps cauliflower purée, pickled raisins and sea purslane as an accompaniment to scallops, while main-courses could see beef brisket sharing a plate with a sandwich of oxtail, parsley root purée and cumin. The left-field approach continues to dessert - pistachio cake, perhaps, with salt caramel, raspberry and coffee.

The quality of food at 'The Green Room Restaurant' was superb. The dishes served as part of the 7 course Great British Food menu were innovative, fun and flavourful. This chef is clearly aiming high, however the overall experience was badly let down by the quality of service, the drinks service was slow and one of the complementary wine courses was completely missed, the bill was wrong and several similar mistakes were witnessed at other tables.
