With its black timbers and beautiful herringbone brick, it's hard to believe this splendid Sussex inn was once declared 'permanently closed'. Thank goodness for Tom Sellers, who while busy with the success of Restaurant Story in London was not too busy to rescue the Lickfold. His background includes some of the world's best kitchens - the legendary Noma in Copenhagen, plus time spent with Tom Aikens and at Per Se in New York - which means you can expect exciting and unusual dishes. It's still a pub, though, so you can enjoy traditional pleasures like a pint and fancy bar snacks (a fish finger sandwich, maybe, or seasonal root crisps), but upstairs in the restaurant you'll find out what chef Graham Squire is up to in that state-of-the-art kitchen. There is no unnecessary description on the menu, where starters might include scallop, crab, sea herbs and buckthorn, or chicken and leek terrine with warm potato bread. Main courses take in beef, oyster and salt-baked celeriac as well as goose with sprout tops and potato purée, and you'll need to save room for the elegant desserts - bitter chocolate and blood orange, say, or rhubarb soufflé with burnt custard ice cream.
