This grand old Edwardian property by the city's ancient walls was built as the HQ of the North Eastern Railway and its fine features and generous proportions made it an ideal candidate for the hotel business. Today's luxurious establishment has stylish bedrooms, a glamorous spa, and a restaurant that catches the eye. Hudson's muted colour scheme, comfy upholstered chairs and linen-clad tables gives the room a sophisticated sheen, with formal and professional service to match. Head chef Craig Atchinson and his team turn out a contemporary repertoire with a local flavour and modern cooking techniques to the fore, with suppliers name-checked on the menu. Start with roast Norfolk quail glazed in Minus 8 vinegar, Jerusalem artichokes, toasted quinoa and a little pot of punchy wild garlic sauce on the side, or go for smoked sea trout with smoked heritage beetroots and watercress cream. Fillet and cheek of pork comes with a sharp elderberry jus and moreish squash and lemon caramel (like a purée), while a fishy main course might be East coast halibut with mussel sauce. Finish with a sophisticated carrot cake or Medjool date sponge with roasted Granny Smith apple. A tasting menu is up for grabs and afternoon tea is a real treat.
