The luxury hotel is at the heart of the 12,000-acre Goodwood Estate, with the organic home farm providing the kitchens of its various restaurants with pork, lamb and beef. Seared scallops come in a fashionable pairing with crispy chicken wing, charred spring onions, sweet and savoury bacon jam, and wild garlic buds. Main course serves up that splendid Goodwood lamb with hay-baked beetroot and carrots, sorrel leaf, and charred asparagus, or there could be estate-reared Saddleback pork with aubergine, olive and baby vegetables. Fish options may include roast fillet of halibut with crayfish, sumac gnocchi, grapefruit, burnt cauliflower and sea herbs. At the finishing line try a dessert of peanut parfait and brittle with cherry sorbet.
