The Rosette award for this establishment has been suspended due to a change of chef. Reassessment will take place in due course under the new chef. Dating from the 15th century, the inn stands just a stone's throw from the walls of Beaumaris Castle and comes with a serious weight of history, having provided lodgings for parliamentary forces when Cromwell's General Mytton requisitioned the place during the Civil War, as well as less belligerent illustrious patrons, including diarist Dr Samuel Johnson and Charles Dickens. It underwent numerous transformations over the years, and now offers swanky boutique accommodation for the style-conscious 21st-century traveller, as well as bang up-to-date dining possibilities, running from a traditional pub to an elegant bistro, as well as the flagship first-floor Loft restaurant, where sloping ceilings and a fawn colour scheme are enlivened by swirly patterns on the walls, friendly engaging service, and the confident modern Welsh stylings of Hefin Roberts. Excellent breads, including chive brioche and caraway focaccia, are memorable accompaniments, and being so close to the sea, fish and shellfish are a notable strong point, evident in a dinner that progresses from smoked sea bass with spiced raisin purée, asparagus and sweet grapes to accurately seasoned seared turbot with brown shrimps and puréed celeriac, a main dish built around the ingenious note of caramelised fermented cabbage fired up with ginger and chilli. For meaty fare, look to roast loin, smoked kidney and crispy shoulder of Anglesey lamb partnered with fondant potato, parsnip purée and wild garlic. A technically dazzling layered cheesecake comprising lime and apple sections, served with creamy basil ice cream and cider-soaked apple, is a concluding triumph, or you might opt for Welsh cheeses with bara brith and turmeric crackers.
