Brehon was the name for the ancient body of law that governed Ireland. It gave its subjects an obligation of hospitality, so is a logical name for a hotel. The kitchen fast-forwards us to the present day with contemporary Irish cooking of impressive depth. That translates as organic Clare Island salmon cured in orange and vodka, accompanied by salmon tartare, ribbons of pickled cucumber and horseradish cream, before pinkly seared lamb rump in a jus infused with Douglas fir needles, served with a dollop of buttery colcannon threaded with vivid green kale and seasoned with smoked paprika. Finish with a faithful interpretation of crème brûlée with home-made biscotti.
