The breathtaking views alone make the considerable effort of travelling to Ullinish worthwhile, with lochs on three sides and the rugged beauty of the Black Cuillins and MacLeod's Tables marching across the skyline. The white-painted restaurant (plus six guest rooms) dates from the 18th century, and is done out in a traditional style with tartan carpet in the intimate restaurant, where service is relaxed, friendly and polished. A daily 'link van' collects meat, seafood and garden produce from a network of the island's small suppliers and delivers them to the kitchen. Start with hand-dived scallops served with squid ink tortellini and saffron cream sauce, or Perthshire wood pigeon matched with flavours and textures of brambles and beetroot. Among main courses, fillet of Speyside beef is finished with a red wine jus, while a fish option might be Scrabster cod with chive gnocchi, white onion purée and a fashionably charred lettuce (romaine in this instance). The cheese course is a little out of the ordinary, offering up something local, Clava brie, say, with onion chutney, venison salami and a croissant - and it is served before dessert. To finish, tonka bean flavours a pannacotta, and rhubarb parfait keeps company with the more exotic mango.
