Billesley Manor is a charming mellow-stone Elizabethan mansion set in 11 acres of well-tended grounds deep in Shakespeare country. The Stuart Restaurant is split into two adjacent areas, one more like a minstrels' gallery, the other with oak panelling and a fireplace. The kitchen works around a slate of modern ideas, turning out an impressive starter of caramelised scallops on apple purée with black pudding hash and a crispy quail's egg. No less accomplished are main courses such as lamb cutlet and braised shoulder with pea purée, dauphinoise and mint jus. Finish with something like rich chocolate fondant with marshmallow and honeycomb ice cream.
