Inver Restaurant is AA Restaurant of the Year for Scotland 2016-2017. The uplifting setting on the shores of Loch Fyne is in itself worth the trip out to this unassuming little restaurant in a whitewashed cottage done out with Scandinavian minimalism and a dose of cool, retro styling. Chef Pam Brunton has done time in the renowned kitchen of foodie-mecca Noma in Copenhagen, so it's no surprise to see on-trend Nordic influences appearing in the food too, where foraged ingredients and some eye-opening combinations combine to great effect. Eclectic influences and a creative mind deliver a knockout starter of chanterelle mushroom soup with seared chicken hearts, smoked egg yolk and baked chervil root. Main course brings a head-to-tail serving of pheasant involving confit leg meat in a richly savoury porridge, blood buns topped with a gamey liver parfait, and pink-roasted breast with cavolo nero and hispi cabbage, bacon fat emulsion and parsley powder. The kitchen also shows its class with fish - marinated mackerel with baked beetroot, oyster emulsion, crispy seaweed and horseradish cream is a medley of superbly balanced, crystal-clear flavours. Baked quince with buttermilk curds, pink peppercorns, rosehip ice cream and shards of meringue makes a lively, textural finish. The details are spot-on too: excellent sourdough bread and butter are made in-house.
