Humphry's at Stoke Park

Stoke Park is a splendid white mansion with a dome and columns in 300 acres of parkland, lakes and gardens laid out by Capability Brown and reworked by Humphry Repton. It's an estate of many parts, with a championship golf course, no fewer than 13 tennis courts (tournaments are held here), spa and leisure facilities, a gym and indoor pool. It has also served as the location for a number of films and pop concerts. The interior has original architectural features, oil paintings and all the swanky trappings expected in a luxury hotel. The cream of the three eating options in Humphry's, named after the landscape gardener who designed the bridge over the lake it overlooks. It is a magnificent room, with a marble fireplace, floor-to-ceiling windows, a corniced ceiling and a decor of golds and yellows. In charge of the kitchen is Chris Wheeler, a switched-on, innovative chef working around a tranche of contemporary ideas based on a foundation of pedigree ingredients. It's no surprise to find luxury items on the menus, among them lobster and beef tournedos, but the style is far from dyed in the wool, with plenty of exciting options. Among starters, crab goes into a tian with avocado and has accompaniments of cucumber jelly, a soft-boiled quail's egg and grapefruit salsa. Roast pheasant consommé is partnered by braised leg tortellini. Main courses illustrate the same attention to detail in such labour-intensive dishes as pan-fried halibut fillet with girolles, samphire, cracked pepper linguine and a langoustine bisque foam, and roast breast of duck with a cylinder of leg meat, textures of beetroot, a potato croquette and spicy jus. Puddings keep pace with the rest of the output, among them perhaps apricot soufflé with almond and Amaretto ice cream and apricot sauce.
