The 2015 redesign of Ormer, largely the work of in-demand restaurant designer Martin Brudnizki, is something to be seen. Shaun Rankin's town centre venue is topped by an overgrown roof garden and cigar terrace, a must for balmy Jersey nights. In the ground-floor restaurant, mustard-yellow armchairs face royal blue sofas at tables equipped with small lamps, against a backdrop of walls in delicately striped panels with sconces. Island produce pours forth from menus of intricately worked dishes, where the combinatorial arts are explored with gusto and every element earns its place. A piece of seared foie gras is scattered with sea salt and served with dried grapes and hazelnuts, the final touch an opulent velouté of Beaufort cheese poured at the table. Main may be pine nut-crusted turbot on puréed cauliflower, another clever textural exercise, with samphire and sea purslane to emphasise the maritime mood, or perhaps venison with chocolatey beetroot purée, macerated blackberries and chestnut granola. Torn between cheese and dessert, you could opt for the ingenious compromise of ripe Camembert drizzled with orange marmalade, accompanied by salt caramel, pecans and milk foam. Home-made breads are impressive, and when the appetiser is chorizo and parmesan custard coated in panko, you're in for a memorable experience.
