The seaside setting by West Sands beach is not the least enticement of the Macdonald group's Rusacks Hotel, and will be particularly appreciated by those who are anything less than utterly impassioned about golf, which is the main draw- this is St Andrews after all! So much so that the Rocca dining room looks panoramically over the 18th fairway, allowing diners to see the conclusion of every game. A golfing concierge is on hand to keep you updated. The cooking takes a twin-track approach, combining a relatively straightforward Italian focus with intricately detailed Scottish modernism, and the unimpeachable quality of all prime materials adds high gloss to the operation. Evidence for this comes with an opening dish of flame-grilled mackerel, the fantastic flavour of the fish echoed in a tartare presentation alongside an ingenious cannelloni of crab in apple jelly, or the scallops with acorn-fed black ham and pumpkin gnocchi, seasoned with ginger and sage. At main course, Dornoch lamb cooked in hay appears in a comprehensive serving of the neck, loin, noisette and breadcrumbed sweetbread with cheesy potatoes and broad beans, while Orkney beef combines the fillet with braised short rib, helped along with smoked mash and porcini ketchup. Fish might be turbot from Scrabster, served with an oyster fritter, black quinoa and caviar. Nerveless technical ability produces a perfectly risen raspberry soufflé with raspberry ripple ice cream and sauce, or Braeburn apple cake with matching parfait in bay leaf custard. Should the putting action still be going on out there, you might fill in with a selection of European cheeses served with membrillo and oatcakes. The One Under Gastro Pub offers simpler bistro fare.
