There are a number of fine dining establishments offering wonderful vistas of the Old Course at St Andrews but only Rocca provides unparalleled views of the world-famous 18th hole - window seats here are hotly contested by those wishing to overlook the fairway. The cooking at the Rusacks Hotel combines Italian simplicity with inventive Scottish modernism conjured from top drawer produce sourced from Fife and Perthshire. The ingredients shine throughout a meal that might kick off with perfectly timed hand-dived West Coast scallops, their sweet freshness accentuated by acorn-fed black ham, a robust orange purée and added textural contrast from hazelnuts and chicory. At main course, impressively tender Goosnargh duck appears with crisp and golden sarladaise potatoes, sweet and full-flavoured heritage carrots, rhubarb and gingerbread. Another second course sees Anstruther lobster teamed with a tagliatelle of herbs and sauce vièrge. A dessert of dark chocolate pavé delivers a bitterness that is perfectly complemented by the light and creamy dulce de leche and crunch of the hazelnuts. The well-constructed wine list featuring a fair few meaty Italians offers a generous number by the glass. The hotel's One Under gastropub offers simpler bistro fare.
