The original parts of the building date from the 15th century, with the Georgians and Victorians chipping in along the way, to create a period house of genuine charm. There are wooden beams from ships that fought in the battle of Sole Bay (and that was in 1672!) and ornate ceilings, coving and real fireplaces throughout. The fixtures and fittings cut a more contemporary dash, giving a decidedly chic finish. Likewise, the cooking impresses with its modern ambitions, passion for seafood, and loyalty to local ingredients (fruit and veg come from their own allotment, and there's a local flavour all round - 'food yards', as they say). Start with Debden mussels in classic marini?re style, or English snails with a parmesan and asparagus souffl?. Main-course roasted cod loin comes with champ, clams and brown shrimps, and a meaty option might be 28-day aged fillet steak with sweet potato skinny fries. Dessert stage might deliver bread-and-butter pudding with a br?l?e topping and vintage marmalade ice cream, or lemon and ginger cheesecake with candied lemon.
