Owners Janet and Perkin Evans have renovated 12th-century Crug Gls using local materials to achieve smart modernity without trampling on the house's history. At the end of the day, kick off the walking boots and settle into the formal Georgian dining room for Janet's traditional country-house cooking. Pembrokeshire's finest produce forms the backbone of menus that aim to comfort rather than challenge. Cream of celeriac and apple soup gets a lift from curry oil and parsnip crisps, followed by pan-fried pheasant breast with chestnut-stuffed cabbage, dauphinoise potatoes, parsnip pure and an aromatic sauce of apple and Black Mountain liqueur. Finish with a salted caramel and chocolate slice.
