You're only a couple of minutes down the line from the railway station for Birmingham airport, and yet, roaming the 45 acres of mature woodland in which Hampton is set, you'll find this is a thoroughgoing pastoral retreat. Quite the stately pile in fact, as inside is all relaxing elegance, the stylish guest rooms named after historic personages, including the founder of the modern police force, who is honoured in Peel's Restaurant. Overlooking the clock-tower gardens, this former dining room of the manor is a suitably impressive setting with its original oak panelling, grand fireplace, and stunning chinoiserie style wall friezes, with brilliant birds and floral motifs hand-woven in silk. The highly polished cookery to match comes from Rob Palmer, who takes a confident approach with dishes built on a few fine ingredients rather than an avalanche. Begin with a double act of crackled pork belly and langoustine, garnished with diced apple and leek in a ginger-inflected sauce. At main course, there may be halibut with mussels and Jerusalem artichoke purée, or beautifully rendered Muscovy duck breast in lavender oil with carrot variations - some purée, finely shredded shards with golden raisins, and one hefty great brute sitting there entire. A complex dessert construction offers chocolate crémeux, hazelnut ice cream, PX sherry and nitro-frozen chocolate, or there could be a passionfruit creation with bubbled white chocolate and liquorice. Incidentals, from architecturally inventive canapés to petits fours, both of which are served on flat stones, are equally stunning.
