In the restaurant situated in the one-time cow shed, expect a smart rustic finish with exposed stonework, a central fireplace and pretty terrace. The kitchen calls on the walled organic garden for supplies, and a newly installed smoker brings a potent aroma to proceedings. The menu is filled with dishes that reflect modern ideas and cooking techniques. Start with house-cured bacon and radish tops with celeriac and ash, and move on to fillet of hake with cauliflower, pollen and squid ink. A meaty main course might be hay-smoked duck breast with a mini Wellington, and finish with a deconstructed classic such as poached apple with crumble, sorbet and cider sabayon.
