This step-gabled Victorian mansion has period charm in spades, although the cooking in Upchers restaurant takes a rather more contemporary European view of things. Lamb kofta with spiced aubergine caviar, cucumber and mint raita and Madras foam might open the show. With the briny so near, a fillet of sea bass with herby crushed potatoes, wilted greens, fennel purée and caper and tomato sauce is a good bet. Local meat often appears in two-way servings such as roast smoked breast and poached leg of guinea fowl served with fondant potato, mushroom purée and smoked pancetta jus. To finish, maybe cappuccino crème brûlée with chocolate truffle bonbons or Norfolk cheeses.
