The Allens were ahead of the curve 50 years ago when they opened a restaurant in their farmhouse. Now there's a cookery school and hotel, and the idea of fresh produce brought to the table in double-quick time seems the happy norm. The restaurant is supplied by the farm and walled garden, and the kitchen team has a wealth of superb produce to work with. Smoked mackerel rillettes with beetroot relish might start things off, while another opener offers garden chicory in an anchovy- and parmesan-dressed salad. Main course Ballycotton monkfish comes with sprouting cavolo nero, or there could be peppered venison haunch with Jerusalems in red wine.
