The Hare is a 21st-century restaurant in a 13th-century inn, and although there may well be local ales at the pumps, it's really all about the dazzling cooking of Paul Jackson. It certainly looks the part of an old moorland inn, with a rugged exterior painted in pristine white, and indoors there's plenty of character in the form of original features and some quirky fixtures and fittings. Mr Jackson seeks out the very best ingredients that abound in this part of the world and offers them up in creative ways via fixed-price menus. Things get going with an amuse-bouche such as smoked cod roe and miso-flavoured mayonnaise atop a piece of crispy cod's skin, and breads include a mini loaf flavoured with parmesan and truffle. The meal proper might start with a prettily presented dish of bream, the perfectly timed fish loaded up with wild flowers and three succulent mussels, before a meat course of Sutton Bank Dexter beef (from just down the road) arrives pink, tender and full of flavour. Next up, local grouse is served with textures of beetroot and goats' cheese, followed by a dessert such as the invitingly titled milk and honey. Each dish has a recommended accompaniment from the compact wine list.
