A timbered manor house in 40 acres of picture-perfect Sussex countryside, Ghyll Manor is an obvious candidate for a retreat from the hurly-burly of the southeast. Inside, an appealing mixture of period features and modern styling creates a harmonious impression, and there's a terrace overlooking the gardens for summer aperitifs. Graham Digweed became head chef in late 2013, and maintains a steady hand at the tiller for country-house cooking that has its finger on the pulse of current tastes, without going all out for gasp-inducing avant-garderie. Beetroot-cured salmon with pickled fennel and cucumber is a modern classic dish, without question, but other starters are more trad, perhaps ham hock terrine with Bramley apple compôte, before main courses arrive to deliver slow-roasted pork cheeks with white beans and chorizo, or rosemary-scented chicken breast with lentils, mushrooms and smoked bacon. Finish up with bread-and-butter pudding, or a passionfruit parfait garnished with toasted meringue.
