This Georgian rural retreat is the model of a warmly welcoming country hotel. Delicately constructed mushroom ravioli made of sheer pasta are enhanced with chorizo and a salad of shredded chicken, lobster cocktails come with Bloody Mary gel, and salmon is cured in maple syrup and orange and served with a beetroot blini. Among main courses, things go Moroccan for the spiced lamb samosa, and apricot and pomegranate tabbouleh, that come with braised lamb rump, or there may be red snapper in sauce vièrge. A signature take on banoffee produces cookie dough, caramel parfait and fudge, along with banana ice cream and chocolate shreds, for a triumphant finale.
