Kilronan certainly looks like an authentic medieval castle, complete with crenallated turret, but it actually dates from the early 19th century. Perhaps unsurprisingly, given the grand setting, the kitchen looks to French classicism for its inspiration, spiked here and there with oriental notes. A starter of quail Benedict sees a brace of quail breasts served atop wilted spinach on a toasted muffin and pointed up with a well-made hollandaise sauce, while main course sea bass fillets come with Dublin Bay prawns, prawn mousseline, and a deeply-flavoured reduction of fish stock and dry Vermouth. Dessert is an elaborate millefeuille layered with creamy 'pannacotta' parfait.
