Tony Tobin is well known to armchair chefs from his TV appearances and his restaurant has been a hit with foodies since 1993. Celeriac and apple risotto with smoked quail's breast and a poached quail's egg might appear among starters. Mains are all about pedigree materials: pan-roasted fillet of turbot, say, in a punchy surf-and-turf duo with braised oxtail, potato fondant, baby gem lettuce and a complementary kick from lemon oil, or beef fillet matched with cauliflower and potato dauphinoise, spinach, and truffle dressing. The inventive approach extends to puddings such as tonka bean and white chocolate mousse with chocolate soil, wattle seed ice cream and coffee jelly.
