Standing in 12 acres on Nutfield Ridge, the Priory is classic Victorian neo-Gothic, dating from the 1870s. The Cloisters has mullioned windows offering expansive views over the grounds and lake, and makes an appropriate backdrop for a refined, modern take on country-house cooking. You might start with lobster bisque with cannelloni of celeriac and lobster, then move on to a three-bone rack of lamb with pressed leek and potato gratin, red cabbage braised with plums, and garlic and rosemary crisps. Keen interest is maintained through to the many-layered desserts, which may include green banana parfait with salted sesame brittle and parsley ice cream.
