Resident chef Anton Piotrowski has seen an upsurge in business since his triumph on a MasterChef The Professionals. Stake your claim early, and be rewarded with energetic modern cookery of a high order. First up might be a slab of meaty terrine composed of suckling pig and black pudding, garnished with mandarin, pickles and toasted brioche. A small fillet of John Dory appears alongside a courgette flower stuffed with scallop and shrimp mousse and a king prawn wrapped in a jacket of pork crackling. Herb-rolled venison loin with confit onion, red cabbage and carrots looks more the part. Elegant desserts include a meringue globe encasing lemon curd and matching sorbet.
