Langrish House has been home to the Talbot-Ponsonby family for seven generations, and when you see the gorgeous 17th-century mansion in 14 acres of undulating Hampshire, it's no surprise they've stayed. Frederick's restaurant immortalises an off-the-wall Victorian great-uncle and is a cosy, traditional spot, or you can dine in the low-lit intimacy of the old vaults below, dug by Royalist prisoners in the Civil War. Kick off with herb-coated salmon ballotine with fromage blanc, Avruga caviar and lime, before moving on to saddle of venison with its own biryani, rainbow chard and caramelised cauliflower. Winding up proceedings is blood orange soufflé with bay leaf ice cream.
