In a manor house in fine gardens overlooking South Inch Park, the format is a five-course fixed-price menu, with two or three choices at most stages. Proceedings might open with grilled smoked mackerel with Beaufort cheese crumble in winter minestrone, or more robustly with wild hare in celeriac velouté, before an intervening soup turns up. A three-way option for main might encompass halibut fillet with roast chicken and scallop cream and fragrant rice, Highland venison with haggis cannelloni, bittersweet cabbages and neeps, or the standby classic, Angus beef fillet in béarnaise. Cheeses precede the dessert alternatives, which could be poached rhubarb in pink peppercorn sabayon with white chocolate mousse.
