The kitchen deals in contemporary food with clear European accents, turning out a pressed game terrine of guinea fowl, duck, rabbit, pistachios and leeks, countered by a lively quince chutney, among starters. For mains, pan-fried lamb might come with samphire, turnips, Parmentier potatoes, apricots and rosemary jus, while fish dishes could see seared gurnard partnered with kohlrabi, pak choi, and tomato butter sauce. End with rhubarb and stem ginger pannacotta with pineapple carpaccio and orange sorbet, or bow out with a plate of Oxfordshire cheeses.
