The Celtic Manor is a vast hotel complex with spacious public rooms off a soaring atrium, tournament-level golfing, a spa, fitness centre, and even a kiddies' club. It has its fair share of eating options too, with the jewel in the crown, the crème de la crème, being Terry M, named after its chef-patron Tim (you thought it would be Terry, didn't you?) McDougall. The restaurant celebrated five years with three AA Rosettes in 2013, an achievement that's testament to McDougall's unwavering passion for top-notch ingredients, combined with considerable technical skill and creative flair. The elegant restaurant has a tasteful décor of plain walls hung with mirrors, polished floorboards, and distinctive dangling crystal chandeliers, while the highly professional and slightly formal style of service adds to the sense of occasion. Carefully sourced, seasonal materials - meat from selected Welsh farms, fish delivered daily from Cornwall - are given upfront modern treatments, resulting in dishes with fresh, powerful flavours: crab ravioli with crab broth and spiced tomato, for instance, is accompanied by gésier salad, and may be followed by accurately-timed fillet of red mullet with rocket and passionfruit sauce and roast vegetables. The menu, with around half a dozen choices per course (there's a tasting option too), holds plenty of interest and variety, and dishes are notable for their judicious combinations, so chicken boudin is a striking contrast to a starter of seared scallops with white beans, and truffle butter jus complements rib of beef with potato galette. Vegetarian options are approached with the same level of imagination and skill, as in a main course of truffled polenta with parsley root fondant, herb coulis and wild mushrooms. A pre-dessert - caramelised apricot with liquorice ice cream, say - heralds the goodies to come, which may run to blueberry soufflé triumphantly partnered by sweet chilli jelly and banana ice cream.
