With over 2,000 acres of panoramic parkland, three 18-hole championship golf courses and other sporting facilities, Celtic Manor is an impressive set-up. There's a plethora of drinking and dining venues, with this the top-end choice. Contemporary and elegant, it features modern artworks, walnut flooring, cascading crystal-bead chandeliers, high-backed ivory leather chairs, and linen-clad tables served by formal, attentive staff. Richard Davies started out here in the 1990s before striking out to hone his talent in a succession of stellar kitchens. He's back to regale us with the finely-tuned modern British cooking showing the flair, imagination, balance and depth of flavour one expects of a high-calibre restaurant, delivered via the wide-ranging carte, a six-course tasting menu, or great value 3-course lunch. Start with a torchon of foie gras, its richness balanced by rhubarb, orange and gingerbread, and follow with a duo of pork, the belly meat rich and well rendered, the cheek wrapped in crisp potato, and served with textures of carrot and a hit of Szechuan spice. The food is meticulously worked and hewn from a classical mould, thus fish courses might see turbot paired with ceps, celeriac and pancetta. To finish, there's an impressive semi-fredo of lemon and meringue enhanced by the grown-up notes of anise and liquorice.
