A country-house hotel that is popular on the wedding scene, its interior combining period charm with 21st-century boutique glamour. Down in the vaulted basement there's a slick contemporary finish to the space and a menu to match. The kitchen's output is focused on regional produce and there's evident technical ability on show. Dublin Bay prawns make an appearance alongside a tomato and chilli aļoli, snappy sesame tuile and punchy pickled cucumber, with main courses running to a rack of tender Slaney lamb with a nicely judged salsa and pommes Anna, or baked fillets of sea bass with crab and fennel croquette. Finish with a good-looking Pina Colada millefeuille.
