Rookery Hall was built in 1816 by the owner of a Jamaican sugar plantation whose wealth is evident in the sumptuous interior. Notable starters include crisp pork belly with pea purée, caramelised Granny Smiths and Maxim potatoes, and white crab meat with tomato confit, red pepper and avocado sorbet. Sound technique and accuracy are hallmarks of main courses too, seen in breast of Yorkshire grouse with creamed potato, bread purée, cabbage and bacon fricassée, watercress cream and wood sorrel, and monkfish in curry sauce with sauté potatoes, broccoli and crispy almond flakes. For pudding try prune and almond tart, its pastry lightly flaky, with Armagnac ice cream.
