This early 19th-century inn in a Perthshire conservation village, which once provided stabling for coach-horses plying the Highland roads, has gone through a number of incarnations and names over the years, and settled into its present manifestation with the arrival of Fabrice and Alison Bouteloup in 2007. Now a modern-day restaurant-with-rooms, its ancient brick and stone walls enhance the pleasingly come-as-you-are feel of the dining room. French and Mediterranean food traditions inform Fabrice's cooking, expressed through the medium of pedigree Scots produce. First up might be chicken and chorizo terrine with puréed trompettes and saffron-pickled cucumber, or peat-smoked haddock and a seared scallop with a gratin of courgette and potato in gremolata. Those lively openers lead on to saddle of venison with charred cabbage in truffle emulsion, or orientally inspired East Neuk monkfish tail dressed in red chilli and coriander, with orzo pasta and choi sum in Asian-spiced lobster bisque. For afters, seasonal berries come with white peach sorbet, rosé wine jelly and mint cream, while the crème brûlée is fragranced with rosemary.
