Mulranny Park Hotel

Once the station hotel for Mulranny, opened by Great Western Railways in the 1890s, this is now a sumptuous country-house with sweeping views over the Atlantic. A duo of Keem Bay smoked salmon and barbecued fresh salmon with honey-mustard aïoli, pickled cucumber and red onion dressing might start proceedings, with complex but effective main dishes extending from seared duck magret with black pudding mousse, braised spiced red cabbage and puréed parsnips in veal jus to roast Curran blue trout with chorizo and baby leek orzo and sauce gribiche. Tempting finishers include pear and almond frangipane tart, served warm with crème anglaise and rum and raisin ice cream.
