The Redcastle estate can trace its lineage all the way back to a 16th-century proprietor called Cathal O'Doherty. At one point, it was owned by a Pennsylvania farming family, but today it makes a superbly located northwestern seafront hotel in the modern boutique style. A terrace overlooking Lough Foyle is a covetable place for a sundowner, informal eating is offered in the Captain's Bar, or repair to the Edge dining room for some traditionally-based Irish cooking with modern flourishes. Start with Cashel Blue and asparagus quiche, move on to daube of beef braised in Guinness, or risotto of beetroot and feta with candied walnuts.
