The Scots certainly knew how to build grand houses in the 1870s. This once-staid old pile in 30 acres of grounds three miles from the city centre is now a smart hotel and spa with a jazzy contemporary look that extends to the sleekly designed Blair's Restaurant. Among the modern Scottish dishes are the starter of corned beef and Aberdeen Angus terrine, piccalilli purée, cornichons and rye bread cubes, and the main dish of hake gremolata crust, spinach and leek risotto, and chorizo velouté. A juicy tarte Tatin with Calvados ice cream dessert is perhaps more conformist.
