The sister restaurant to the high-flying French is named after a coach-making family whose Victorian home this was. There is a 35-foot-high tree in the middle of the dining room - of course. This is the more casual dining option in the hotel, but seeing as this is Simon Rogan's version of casual dining, the culinary output is a cut above the norm. A first course full of sharp flavours brings together buttermilk-fried oysters with kimchee, pear and pickled fennel, before lamb rump turns up with spiced green lentils and minted courgettes in garlicky jus. Finish with pineapple Tatin served with peppered caramel and gingerbread ice cream.
