Aiden Byrne's operation in Manchester House is a see-and-be-seen sort of spot, so if you'd like to kick-start the experience by slurping a cocktail and eyeballing the Mancunian beau monde, the lift whizzes you up to the 12th floor of Spinningfields' Tower 12 for a sharpener with cityscape views and DJs setting the mood. Then slide back down to the second floor, where Byrne's restaurant pays homage to Manchester's industrial heritage with its exposed girders, concrete and wrought-iron features. Diners rub shoulders with the chefs as they enter through the open kitchen, while the casually dressed staff back up the laid-back vibe with impressive knowledge. If you're planning a Saturday evening visit, be aware that the only option is the 15-course tasting menu, but the rest of the time the carte leads the way, with the 8- and 15-course tasters available if the whole table is up for it, while veggies are sorted out with a dedicated meat-free carte and multi-course tasters. Dishes are imaginative and technically outstanding, kicking off with cured and baked mackerel with caviar, pickled radish and seaweed. Next up, an uber-posh and faultlessly constructed riff on the surf 'n' turf theme involves a rich and unctuous braised beef cheek with Txogitxu tartare (that's gold-standard beef from the Basque heartlands), razor clam and fermented carrots, or there might be roasted monkfish with baby squid, goat's cheese and onion. For dessert, there's a pretty-as-a-picture assemblage of 'apples, Calvados and caramel' involving apple purée, terrine and cream with honeycomb, rich caramel, and Calvados ice cream.
