The Rosette award for this establishment has been suspended due to a change of chef. Reassessment will take place in due course under the new chef. Manchester's foremost hotel is home to the city's principal dining opportunity, too, with the aforementioned Simon Rogan putting his name above the door and bringing his divertingly contemporary style to the great and the good of the northwest. The revamped French has stepped into the 21st century under the stewardship of one of the UK's most dynamic chefs, and its decor has evolved along with it, so the starchy formality has been replaced by a naturalistic look, with a luxe carpet that looks like floorboards and sleek 1960's-looking tables and chairs. There's lots of room between those tables, while the service remains as slick and professional as you'd hope for in this price bracket. The chef's farm up in Cumbria provides many of the ingredients that find their way onto the six- and ten-course tasting menus - there's a shorter (and cheaper) three-course option available during the day. Adam Reid heads up the kitchen and is charged with delivering the Rogan brand of dashingly contemporary food, where modern culinary techniques enhance rather than overpower the phenomenal ingredients. Expect some unusual native ingredients along the way, many of which have inexplicably fallen out of fashion. Barbecued asparagus is simple enough, simply perfect in fact, with crab and crispy chicken skin, and a punchy watercress purée, while a superb piece of hake gets star treatment in a dish with shrimps and sea herbs, and among sweet courses, you might not be expecting baked squash with caramel custard and barley malt biscuit, plus a little sorrel - inspired.
