In a wee village a few miles from Malmesbury, the Mayfield is in the southern reaches of the Cotswolds and is handy for the M4. The rambling, stone-built hotel is furnished in a traditional manner with a restaurant done out in soothing warm tones with modish leather-look, high-backed chairs and white linen on the tables. On the menu, local ingredients get a look in on the roster of well-judged gently modern British dishes. Start with pan-fried Cotswold duck livers with black pudding and poached egg, or home-smoked Cornish mackerel fillets partnered with an orange salsa, before main-course slow-roasted Gloucesterhsire Old Spot pork belly (soft and tender, excellent crackling) with roast sweet potato and caramelised apple and cider jus.
