A new dimension of classy Anglo-French dining arrived in Lymington with the opening of The Elderflower in 2014. Indian technique comes into play for a starter of curried mussels with smoked tapioca, spiced cauliflower purée and shallot bhajis, while a clump of samphire adds a salty hit. Next up might be Jurassic Coast veal - the loin, liver and panko-crumbed sweetbreads - which comes with a casserole of chanterelles and butter beans and fried kale in an ingenious crayfish bisque. Crème brûlée gets a twist with puréed chestnut worked into the custard, alongside sherry-soaked raisins, clove ice cream and ginger crumb.
