Trishna takes a minimalist decorative line in two dining rooms done out with oak floors and tables, painted brickwork, mirrored walls, and hues of cream and duck-egg blue. The kitchen celebrates the coastal cuisine of southwest India in fresh, flavour-packed contemporary dishes, with equal attention to meat and vegetarian ideas. Baby squid with onions, coconut and lemongrass makes a cracking starter, followed by cod fillet with mustard oil and potatoes, or crab distinctively flavoured with chilli and garlic. Carnivores could go for Keralan-style partridge, then guinea fowl biriyani with basmati rice. Desserts end creatively with bread-and-butter pudding flavoured with fennel, poppy seeds and black pepper.
