The Northall is dedicated to all things British, with the produce of artisan growers and breeders showcased in the modern national culinary style. Cumbrian beef tartare is finely shredded, bound with well-seasoned mayonnaise, surrounded by wasabi, pickled girolles and breadsticks and topped with an egg yolk. Impeccable seafood cookery produces a main course of seared sea bass with confit octopus and razor clams, an ingenious 'risotto' made of riced saffron potato, and assertive garlic velouté. Lamb is aristocratic Herdwick, served with caramelised shallot purée in minted jus. Savoury notes in desserts, often a minefield, are mobilised well for rosemary parfait with fig carpaccio, lemon verbena curd and honeycomb.
