With its exposed brick walls, whitewashed copper ceiling, weathered leather banquettes and restored furniture, this ground-floor restaurant has a counter overlooking the kitchen where people can watch the chefs at work or enjoy a nine-course tasting menu. Chef-patron Paul Hood works closely with co-owner Jason Atherton (of Pollen Street Social) to create a range of highly individual, inventive dishes. Jars to share ('while drinking', says the menu) are a good way into the style, one being confit duck leg rillette with mango and coriander. Nifty ideas are tried and tested and these dishes burst with flavours, often in unusual combinations. Confit spring rabbit, for instance is served as a starter with a chicken and young leek terrine, celeriac, almond, truffle and spinach. A perfectly timed roasted Cornish hake with vadouvan spice, alliums and brassicas, broccoli and olive oil, while the more faint-hearted could go for chargrilled rump steak with béarnaise, chips and salad. The kitchen puts its back into puddings too: consider banana Tatin with a hazelnut and banana financier, fromage frais sorbet, ginger and vanilla or coconut panacotta with blood orange, black olive caramel and a blood orange sorbet
