Dining amid the Victorian pomp of the historic Royal Exchange certainly adds wow factor to proceedings at glossy Sauterelle, where a starter of seared Isle of Skye scallops with cauliflower mousseline, oyster leaves and toasted olives delivers a light, contemporary touch. Main courses bring medallions of fresh and well-timed monkfish on top of a bed of delicate Sicilian red prawn risotto, or a gamey combo of red-legged partridge with braised Savoy cabbage, crisp Ventrèche bacon and pomegranate that chimes perfectly with both the calendar and blue-blooded surroundings. At dessert, coffee and hazelnut combine decadently in a classic Opéra gâteau, offset by a dark chocolate ball filled with tart cherry coulis.
