Marinated seared scallops, beautifully arranged on a glass dish, are served with cucumber marinated in squid ink, radish and amaranth, and make a popular starter. Innovative main courses include roast loin of rabbit in Parma ham stuffed with kidneys accompanied by a croquette of shoulder, braised baby gem lettuce and barigoule of artichokes, say, or roast monkfish with osso buco sauce, veal tongue and pipérade. A skilful pastry cook is behind a crisp pastry case for salted caramel and chocolate tart with raspberry coulis.
