Granted, Pétrus may be at the high-gloss end of the Gordon Ramsay empire, catering to the minted sharp suits, high heels and occasion diners, but it's so much more besides. The room looks comfortable, modern and bright without trying to be overly cool, with its reassuring leather chairs and white linen, the pastel tones jazzed up by splashes of thematic claret, and the centrepiece walk-in glass wine store does justice to the Pétrus name. An effortlessly luxe, sophisticated outfit then, but it's not just an exercise in pompous self-regard: the light modern cooking displays real panache, while service is spot-on without being too fussy. Begin with a flawless scallop, which has travelled from Orkney to be seared and served with bacon and braised kombu in egg sabayon, or with the sautéed foie gras, which comes fragrant with elderflower and enriched with mead, as though it were an old English tradition, albeit with puffed wild rice. Prime British materials are the main-course stars - Gigha halibut, Herdwick lamb, Hereford beef fillet - the last with Dorset snails, rainbow chard and puréed parsnip. Desserts sound straightforward but arrive as architectural marvels, conjured from citrus bavarois and blood orange, or milk chocolate delice with raspberry and rosemary ice cream.
