Whichever you choose, the vibe is a chatty hubbub of people tucking into the forthright flavours of twice-cooked baby chicken with lemon myrtle salt and chilli sauce, then sea bass with spring greens and Calabrese peppers, and rich chocolate mousse with orange oil and crème fraîche to finish.
