We could all do with a top-notch Chinese such as Hubert Jiang's welcoming little place in our neighbourhood. This is Chinese cooking as it should be done - precise, well-judged dishes of clean, clearly-defined flavours. You'll find it all on a quiet residential street close to Earl's Court, in a bijou room with maroon cloths on elbow-to-elbow tables, serving up a compendious repertoire of old favourites running from dim sum to Pekinese and Cantonese classics - soft-shelled crabs baked with garlic, salt and chilli, or crispy aromatic duck with wheaten pancakes to start, then sea bass steamed with ginger and spring onion, or twice-cooked belly pork with preserved vegetables. All the accompaniments like Fujian fried rice or Singapore noodles are top-class too.
