The Iberian-owned art deco hotel pays homage to its national cuisine in the elegant Spanish restaurant, L'Albufera. Serrano ham is carved from a trolley for traditionalists, otherwise grilled octopus with black olive chimichurri dressing and crunchy salsify, or spicy Spanish sausage cooked in cider with lavender are the sort of starters to expect. Paella comes in various forms - a black squid ink version with clams and monkfish, say - while mains could be slow-cooked suckling pig with paprika and garlic-mashed potatoes, mange-tout and thyme jus. For dessert, perhaps lemon posset topped with almond crumble and passionfruit foam, or finish instead with Spanish cheeses served with quince jelly.
